Summary or Abstract : My dissertation explores the conjuncture of cuisine, education and the construction of a national identity in Third Republic France. With most avenues of citizenship denied Frenchwomen, the mechanism by which they came to see themselves as French deserves more attention. Between 1880 and 1914, educators made a concerted effort to mold Frenchwomen of all ages into bourgeois housewives in order to ensure explicitly Republican lessons were internalized. Women were to master the domestic arts in the classroom just as men learned the art of defending the Republic in the army. Focusing on the non-academic courses designed to train women to manage their households properly, I analyze the way in which female republican identity affected the nation as a whole. While historians have shown how female education in France socialized women into prescribed gender roles, no one has explored how these roles fit into the larger nation-building project of the Third Republic. Of course, the ideal of a woman staying at home to raise her children was not a new phenomenon in turn-of-the-century France or in any other Western European country, but the attention paid to the domestic arts marked a significant departure from previous regimes..
